PRODUCER PROFILE: 140+ acres of rolling hills and valleys and a creek in the New Glarus area, specializing in Garlic, Herbs, Whole Wheat Flour, Greens and other nutrient rich vegetables. Although the farm is not certified Organic, they practice "Nature Sensitive Agriculture" which goes somewhere beyond conventional/commercial organic. The Brantmeiers stress working with Nature and Her Spirits as much as possible; harming Her as little as possible. They limit use of tractors and plastic as much as possible. They use recycled bags at market and have a market stand made of recycled material instead of the usual plastic stuff,and also use recycled paper berry cartons instead of the plastic ones.

PRODUCER PROFILE: Joel and Cheri Espe started raising purebred, registered Rocky Mountain Elk in 2001. Hawks Hill is a family owned and operated facility. The Espe's adopted a long-term and whole system approach to the health of the land and the animals in their sustainable operations. No pesticides are used in maintaining the pastures. The animlas are grass fed and free of antibiotics.
Hawks Hill has won numerous national and international championships for their meat products.
Joel is past president of North American Elk Breeders Assn. and executive director of the Non-Traditional Farmers and Ranchers Coalition of the US.
The USDA recently sponsored him to speak at the International CWD Symposium. He also attended a closed-door round table discussion in Washington DC as one of the top 25 leaders of livestock producers in the US.
PRODUCTS: Elk is a red meat which looks a lot like beef but marbled like other red meats. Therefore, when preparing elk, there is significantly less shrinkage. Because of lower fat content a higher percentage of protein and nutrients are present in the meat. The extra protein found in elk meat tends to satisfy the appetite more quickly. These qualities make elk meat a great value and a fantastic heart-healthy alternative to other red meats.
Lean, flavorful and just plain healthy, elk meat is lower in fat and cholesterol than skinless chicken or fish. Our elk are grass raised and grass finished and seasonally supplemented with hay. Our elk meat is the most heart healthy and best tasting of the red meats.
Products available include snack sticks, elk steaks, roasts, burgers and brats.
Cooking instructions and recipes are included with steaks and roasts.
